Vegan Kimchi Quinoa Salad

Ingredients
- JONGGA Vegan Kimchi
- 1/2 cup of quinoa
- Celery
- Cucumber
- Paprika
- Red onion
- Pea
- Sweet pumpkin
- Lime
- 1 tbsp of JONGGA Kimchi juice
- A pinch of salt & black pepper
Directions
- Soak the quinoa in water and boil it for 10-15 minutes.
- Dice celery, cucumber, paprika, red onion, and sweet pumpkin (or any vegetables you want) into 1cm cubes.
- Cut the lime into four pieces around the core.
- Heat the oil in a pan and stir-fry diced sweet pumpkin.
- Mix all the ingredients (excluding lime) along with Kimchi in a bowl. Add 1 tbsp of JONGGA Kimchi juice, pepper and salt.
- Put the mixture in your meal prep containers and top it with lime.
